Bridget’s Note: This was submitted by a reader and is not one of my recipe’s.
This is something my Dad made at least twice a month. I’m not sure if it was something he ate growing up or just something he made that he knew us kids would eat.
My Dad was a Vietnam Vet and a Firefighter for 28 years and he did most of the cooking for his crew every shift. I wonder if he ever made this for his guys?
This is not my Dad’s recipe, but something I think I have perfected. I have tweaked and added to most of my Dad’s recipes through out my years of being a domestic goddess.
I’m pretty sure he would like my changes. I make this recipe on days that I really don’t want to cook, didn’t take anything else out of the freezer soon enough or just something I need my hubby to just pop in the oven because I’m gone.
This is also one of the few meals I do not have to beg my kid to eat! My hubby & kid love to add a fried egg on top. To them left overs are great for breakfast this way!
